                                                dumplings, wilted spinach and mushroom gravy.

                                                   “This dish will be featured in our first
                                                Oktoberfest, which will begin Sept. 29 and
                                                continue through Oct. 14,” says Executive Chef
                                                Cale Beck. The celebration will also feature
                                                dishes like Short Rib Sauerbraten, Potato
                                                Dumplings wth Crispy Bacon & Beer Cheese
                                                Sauce and Kingfish’s Signature Weisswurst.

                                                    The restaurant blends modern American
                                                cuisine with traditional Japanese sushi to create
                                                an innovative and unique culinary experience.

    Back country roads, bubbling water fountains and a historic building add plenty          bartender
of charm and ambiance to a dining experience at Ye Olde Spring Valley Tavern, where
you can also get the freshest trout available in the Lehigh Valley. The trout are pulled
directly from a pond on the restaurant’s property, and the Trout Bella Vista is just one
of several trout dishes on the extensive menu.

   “Every day we pull 10 or more trout from the pond,
debone and refrigerate so they are ready to go when an
order is placed,” said co-owner Donna Walters. “Natalie
Costa, who has been waitressing and bartending with us
since our opening in 2014, highly recommends this dish
with sautéed peppers and onions with the trout prepared
to your liking.”

    Those looking for a calming and relaxing atmosphere
need to look no further than the tavern’s picturesque
outdoor dining area. Happy hour, which starts at 4:30 p.m.
Monday through Friday, is a great time to stop in and enjoy
both the environment and the varied American appetizers,
entrées and homemade desserts.
