Savor a taste of Thailand with White Orchids’ Roast Duck that is one
of the restaurant’s signature specialty dishes only made available for a chefs
short time. The bone-in roasted half duck (dark
meat) is prepared crispy and topped with a sweet
and spice Panang curry, fresh mango, coconut milk,
bell peppers, carrots and cherry tomatoes.
“This dish, as well as all of our regular dishes
on the menu, is special in that we use quality Thai
ingredients, fresh cut vegetables, and 90 percent
homemade sauces,” said owner Jeff Virojanapa.
“Our restaurant stands out because of this, as well
as due to in part because of our talented Thai
head chefs, brothers Pak and Pai. They’re young,
talented and immensely driven and hard-working.”

ShrimP tACoS TApS TAVERN
ChArLeS roBiNSoN There is no lack of ‘kick’ in the Shrimp Tacos that serve as a customer
chef favorite at Bethlehem’s Taps Tavern. The popular entrée starts with a pound of
medium quartered shrimp tossed with ancho chili powder, cumin, chili powder
and granulated garlic, then sautéed until cooked thoroughly.
The addition of Pico de Gallo prepared with fresh jalapeno, plus a topping of
Boom Boom Sauce made with chili sauce and Sriracha, gives this dish plenty
of flavor. According to General Manager Erik Sheetz, the fact
that this dish is made entirely from scratch is what makes it
a popular menu option at the 195-seat tavern specializing in
contemporary American pub-style food.
Shrimp Tacos are just one of several seafood plates on
the menu at Taps, which also has a Heart Healthy menu
that includes Grilled Shrimp, Grilled Teriyaki Salmon, and
a seasonal Shrimp and Strawberry Salad. Taps also boasts
nearly 50 beers on 60 taps, including ales from several
local breweries. The restaurant has become a popular spot
for sports fans, as well as those who enjoy partaking in
scheduled trivia events.
