“Root”
of a Healthy Diet

Root vegetables are simply the roots of a plant. They are easy
to prepare and nutritious…high in vitamins and minerals that
are absorbed from the ground as they grow. Root vegetables
are also high in vitamin C, B vitamins, vitamin A, and
antioxidants. High antioxidant qualities give root vegetables
healing properties to help fight disease and aid in athletic
recovery. They are also an excellent source of fiber.
