These are no-bake cookies that I refer to as “bites” because
I make them small. They are naturally sweet from the dates
and loaded with chocolate and walnuts. They taste like
you’re eating a candy bar without all the butter, sugar,
and artificial flavors.
Ingredients Yields:
• 1 cup walnuts 24 bites
• 1 cup pitted Medjool dates Prep Time:
• ¼ cup unsweetened cocoa powder 15 minutes
• 1 tsp. vanilla or coconut extract Cook Time:
• ¼ cup unsweetened coconut flakes, 0 minutes
for garnish
Directions
1. Line a 9 × 9 inch pan with parchment paper.
2. Place all the ingredients except coconut flakes into
a food processor and blend until a thick dough
forms. You may need to add a small amount of
water here if the consistency is too dry.
3. Press the chocolate mixture into the prepared pan.
4. Refrigerate for 1 hour.
5. Cut into 24 bites and serve. Garnish the tops
of the bites with coconut flakes.
