Chef Francisco Gonzalez says Trompito al Pastor is made with thin strips
of pork tenderloin, marinated in spices and
chilies then stacked onto a long spit called a
trompo and served with fresh grilled pineapple,
cilantro, onions and lime.
“This presentation simulates the taquerias
in Mexico City that are very popular,” he says.
“If you have visited Mexico, you will know what
I’m talking about.”
Talavera Mexican Grill specializes in
made-from-scratch traditional cuisine and 85
percent of the menu is gluten free. Talavera
welcomes BYOB and offers a stylish and
