Eating clean is one of the best ways to improve your health, boost your mood SUN‑DRIED TOMATO

• 8 sun‑dried tomatoes, drained and sliced
• 2 Tbsp. sunflower seeds

Directions:
1. Cook orzo according to package

directions. Drain and transfer to the
pot. Add garlic and oil. Cook for 3
minutes. Add spinach, red onion,
sea salt, pepper, crushed red pepper
flakes and chili powder. Stir and cook
for another 2 minutes or until spinach
is wilted.
2. Remove from heat. Add in sun‑dried
tomatoes. Season to taste. Add
sunflower seeds. Toss and serve.
