s Mardi Gras! W hether you raise a
faschnacht or a glass,
Fat Tuesday is a day
for an indulgence
before Ash Wednesday
kicks off the season of Lent for some
Christian denominations.
Here in the Lehigh Valley we love our
powdered sugar-coated faschnachts on Feb.
17 but also like to throw a party. If you want

to give an authentic Southern flair to your
Mardi Gras menu, serve gumbo, red beans
and rice, oysters and shrimp prepared any
way you like them.

Festive mixed drinks featuring fruit
juices are also served and we offer you a
simple mocktail recipe to help you celebrate.

Pineapple Upside Down Mocktail

Servings: 2 (3/4-cup)

1 cup canned pineapple juice, chilled
1 tablespoon caramel sauce
Ginger ale, chilled
2 teaspoons grenadine syrup
Brown or turbinado sugar and maraschino cherries,
optional garnish

Wet just the rim of a martini glass with a
little water; dip rim in brown sugar or turbinado
sugar for added garnish.
Combine pineapple juice and caramel sauce
in shaker over ice. Shake vigorously; strain into
martini glasses or other favorite glasses. Top
off with ginger ale. Slowly pour in grenadine.
Garnish with cherry, if desired.
Note: For alcoholic variation, combine 3 ounces cake-flavored
vodka or vanilla vodka, 1 ounce Frangelico or amaretto liqueur,
and 6 ounces canned pineapple juice in shaker over ice.
Shake vigorously; strain into martini glasses. Slowly pour in
grenadine; garnish with cherry, if desired.
