Chefs’ Favorites
Whether it’s a culinary adventure, comfort food or a holiday feast with family and
friends, this time of year seems sweeter when you’re sharing a good meal. We’ve asked
chefs at some of Lehigh Valley’s best restaurants to share their favorite dishes. As you
will see, there’s a tasty variety of cuisines represented, in no particular order.

SWEETCHILI CALAMARI
“This is a great dish, very light and flavorful,” says The Brick owner Vito Spinelli.
“You get a combination of sweetness and a kick of heat in our house-made sweet
chili sauce, plus the crispy texture of the fried calamari. We serve it over a bed of
arugula to balance some of the heat with the bitterness of the arugula.”
The Brick serves authentic Neapolitan pizza baked in wood-fired ovens,
which reach a cooking temperature of 800 degrees from a mix of oak and maple
hardwoods. “We use imported flour from Italy,” Spinelli says. “Our tomatoes are
from Italy and we make our mozzarella in-house, as well. The Brick is a
combination of old world and modern atmospheres, from our stone
and brick accents around the bar to the high, open ceilings with
floor-to-ceiling windows.”

winning cheesesteak. This sandwich weighs in at over a
pound, it’s our original cheesesteak topped with mayonnaise,
lettuce and tomato. It is the messiest to eat, but our guests
say that is the best part. It is available in beef or chicken,
and always includes pickles and hot peppers.”
With 19 varieties of award-winning cheesesteaks and
special dietary offerings like gluten-free pizza, Matey’s uses
fresh ingredients including bread delivered each morning.
“We also pride ourselves on our friendly staff, who are always
there to help. We all try to make every guest’s experience a
great one every time,” says owner Michael Matey.
