Apple Cake

1 cup softened butter
4 cups sugar
1 Tbsp. vanilla extract
4 eggs
4 cups all-purpose flour
3 Tbsp. cinnamon
2 Tbsp. nutmeg
1 tsp. salt
1 Tbsp. baking soda
12 apples cored, peeled and chopped

Cream together butter, eggs, sugar and
vanilla. Add the rest of the dry ingredients and
add apples.
Bake at 350 in greased or buttered pan or mold
until completely cooked. Serve on a garnished plate.
This can be used as a side or served as a dessert
after adding desired sides.
