is growing — here’s how to join.
he sun was shining, music was playing, and
the food trucks were humming on July 13th
Tas thousands ventured out to Bethlehem’s
VegFest, an annual celebration of all things veggie in
the Lehigh Valley. This year, a new stand was seen
amongst the vegan hot dogs and dairy-free mac and
cheese: Rodale Institute’s Mobile Market.
Attending the festival as part of the Morning
Call’s VegOut initiative, which encourages healthy
eating and responsible food choices, Rodale
Institute’s Mobile Market consistently drew in
the VegFest patrons. As one of the festival’s only
produce vendors, loaded with baskets of organic
scallions, eggplant, garlic, and more, the Mobile
Market filled a unique niche for those looking to keep
the plant-based experience going at home.
A new portable farm stand selling organic produce
and food products to underserved communities,
the Mobile Market is a function of the Agriculture
Supported Communities program at Rodale Institute.
The Mobile Market travels around the greater Lehigh
